Rocky Road has to be one of the most delicious and easiest sweet treats you can make and the fact that you can literally add any ingredients you want, makes it a winner in my book! I came up with this Hershey's Cookies 'N' Creme Pretzel Rocky Road recipe after receiving this months Taffy Mail* subscription box.
Taffy mail is a monthly American sweets subscription box delivered to your door each month. The box contains things from typical american sweets to limited edition cereals and even some drinks! There are 3 different types of box you can receive, which all differ in price; Lite, Classic and Extra. Anyway back to the recipe...
You Will Need:
210g Unsalted Butter
300g 70% Dark Chocolate
80g Marshmallows
200g Digestives
3 tbsp Golden Syrup
120g Hershey's Cookies 'N' Creme Dipped Pretzels
Icing Sugar
Method:
(1) Melt the butter, chocolate and golden syrup using a bain-marie (glass bowl over a saucepan of boiling water)
(2) Crush the digestive biscuits and add to the melted chocolate off the heat and mix well
(3) Add the marshmallows and crushed Hershey's Cookies 'N' Creme Pretzels and mix well (don't forget to save some for the decoration!)
(4) Pour the mixture into a lined baking dish and refrigerate for 2+ hours (overnight ideally, if you can wait that long!)
(5) Cut into squares, dust with icing sugar and enjoy! (Top Tip: Run a sharp knife under hot water to make cutting the Rocky Road easier)
and that's it! Like I said, super easy, delicious and a great recipe to try with the Kids! You can throw whatever you like into this recipe, like sultanas, nuts etc. (that's the beauty of it!) just reduce the amount of biscuit and marshmallows accordingly.
